Vegan Pad Thai Recipe with protein

My husband and I got home after a very long day and needed some comfort food that wouldn’t stretch out our bellies too far.

I’ve been experimenting in the kitchen with plant based protein and vegan dishes and I have to really sell it to my animal protein loving hub. This dish did the trick.

Let’s get to it, there’s no time to waste. Oh and these are rough measurements, because I didn’t measure anything. I played.

VEGAN PAD THAI WITH PROTEIN RECIPE

Serves 4 or 2 with large appetites

  • 1 package of gluten free rice noodles (soak in cool water for 10 minutes and drain).
  • 1 tbsp olive oil
  • 1 white onion
  • 3 minced garlic cloves
  • 1-2 long organic carrots, chopped
  • Tamari Soy Sauce
  • Your fave hot sauce (I like cholula)
  • Salt
  • Vegetable Broth
  • 6 tbsp hemp hearts

Drizzle olive oil in a heated pan and add 1 white onion. Let it turn translucent (about 5 minutes). Then add 3 minced garlic cloves. Saute for another few minutes. Peel an organic carrot, chop it up and add to pan. Let it cook a few more minutes. Then add your rice noodles and turn the heat to medium high. Add Tamari soy sauce (gluten free soy sauce), your favorite hot sauce and salt and stir fry it around. Add a few handfuls of spinach. Sprinkle a little more salt. Saute a few more minutes. Add 6 tbsp hemp hearts. Continue to saute for a few more minutes, until the noodles are almost crispy. Then add around one cup of vegetable broth. Let the dish come together and serve. VOILA!

My experience + healthy tips during pregnancy

This is how it all started.  You see this foxy guy to my right? That would be my soon to be, baby daddy aka husband.

We met at a grocery store, he took my number, called that night and it’s been heaven ever since.  Okay, 75% heaven and 25% WTF (he would whole heartedly agree).

We met in 2012, were engaged in December 2014, married in September 2015, moved from Seattle to Gig Harbor December 2015 and pregnant in May 2016.  Our baby boy is due January 2017.

He’s an adrenaline junkie and I’m a go with the flower.

We talked about traveling, me building my business and possibly having babies within a year or two.  Well as they say, “Life happens when you’re busy making plans.”  Ain’t that the truth!

This is what I looked like when I found out I was pregnant in May of this year.  I had no idea HOW much my body, hair, skin and emotions would change over the next several months.  Let me tell you this…pregnancy is not for the weak.  You can’t pretend you aren’t pregnant, there’s a little foot or knee reminding you he is inside and will not be ignored.

I started at 125 pounds, teaching yoga + barre and walking every day!  But the fatigue in the first trimester was a beast.

Now, I’m at 158.  A number I never imagined to see on the scale.  A number I don’t really care about (I mean, I’m growing a freaking human), but think it’s hilarious as the number climbs.  Alex, my hub, has also gained some weight.  But he’s the kind of husband who gains 17 pounds of MUSCLE! So while he flexes and flaunts his biceps and abs, I stare at my belly and giggle while eating another veggie chip. And when he goes for his fourth meal around 9/10pm, I happily join him.

But let’s back it up a little.  Here are the weird things that have happened so far…

  • Vertigo went away. This was AWESOME! I have hormone induced vertigo, so whenever I had my period, I’d feel trapped in a salad spinner. I rarely have it now, unless I don’t sleep because the karate kid has decided to host a championship between him and my intestines.
  • Bloody nose 3 times – once while driving with no kleenex in the car…it was not pretty.
  • Diagnosed with pregnancy rhinitis
  • Candida overgrowth – took western meds, didn’t get rid of it, now on heavy duty probiotics, no sugar/caffeine and daily ACV (apple cider vinegar).
  • Dry/Itchy scalp – my hairdresser noticed and said this is common with hormonal changes due to pregnancy. Not cool Hansel.

Seriously though, I’ve been really freaking lucky!! No morning sickness, just some intense nausea that went away in the first trimester.

Food aversions:

  • Eggs (cannot handle the smell)
  • Meat (at least in the second and third trimester) at the beginning, you could’ve called me Sausage Sally.
  • Green beans

Food cravings:

  • Strawberries
  • Ginger
  • Vegan protein pancakes
  • Gluten free Bagels
  • Pizza
  • So Delicious Mint Chocolate “ice cream”
  • Chocolate
  • Broccoli
  • Apples
  • Lemons
  • Peppermint
  • Bananas
  • Acai bowls
  • Waffles

Prenatal supplements:

Love this brand Rainbow Light. I first bought Nature Made prenatals from Costco and it increased my nausea and made me feel hungover in the morning.  These prenatal vitamins are awesome and don’t make you feel terrible!

I bought these because I was advised to get extra Vitamin D and they taste really good. I take one a day and they have 1 gram of sugar per gummy.

The probiotic supplement I was advised to take to reduce/eliminate candida overgrowth and promote good gut bacteria.  It was either this or eating yogurt and yogurt makes me gag, so….

I started using this for my dry scalp and LOVE IT!  It feels so good on my head and smells divine!  It’s also safe to use while pregnant. Do not use regular anti-dandruff shampoo/conditioner, not safe for you or baby during pregnancy.

This third trimester tea from Earth Mama Angel Baby tastes delicious and is supposed to get your body ready for labor.  I love this brand!!

Homemade deodorant – wanted to be super safe during pregnancy, no extra metals/toxins leaking into my lymphatic system…

  • 2 tbsp baking soda
  • 2 tbsp cornstarch
  • 3 tbsp coconut oil
  • 5 drops peppermint essential oil.

Store in glass mason jar, apply with two finger tips.

We bought a squatty potty – these are supposed to be amazing for getting your body in the right position for labor and helps with digestion. I loved it and highly recommend!

Prenatal self-care:

  • Stopped teaching yoga at 32 weeks

  • Signed up for a 6 week fitness challenge in week 30, only to quit 3 weeks later due to medical advice…”What do you mean I’m supposed to be able to breathe?”

  • Monthly prenatal massages

  • Monthly pedicures

  • Sleeping longer and without an alarm clock

  • Drinking a ton of water + herbal tea

  • 2-3 walks per week with my dude

  • Allowing myself to say, “raincheck” when exhausted and wanting to relax

  • Bubble bath with lavender essential oil

  • Peppermint wafting through diffuser

Hope this helps if you’re pregnant or thinking about it!  I really do think the more natural approach to everything during pregnancy helped!  And listening to your body, giving into cravings (with moderation) and taking extra time and space for you to emotionally prepare to meet your baby.  Now we wait to meet this little guy.
